Wine Society December Update:
Wow, have we been kicking “corks” or what?  Our November meeting was out of this world……it just keeps getting better & better…what can I say but…how bout them WINOS!  Erin, from Empire Distributors of North Carolina never ceases to amaze us with her extensive knowledge of “all things wine”.  She entertained us with her knowledge & wit while sharing information about New World Reds.  You missed it, folks, if you were not at our party!

Our December meeting will be a Holiday Celebration with our Wine Society Members each bringing a bottle of their favorite libation to share with each other as we “Wine” down the year. Don’t forget WINOS, bring your favorite Red or White and wear Red & White to celebrate, if you dare!
(TSC members, the Wine Society still have a few memberships still available but they are going fast and when we reach our limit, membership will be closed.  Check with us to get details on how to become a member of the Wine Society…..we’d love to have you join us!  Gift a membership to the Wine Society for Christmas this year to someone you love.)

Your Grape Therapy:
What’s a good wine? A good wine is, above all, a wine that you like enough to drink-because the whole purpose of a wine is to give pleasure to those who drink it!  After that, how good a wine is depends on how it measures up to a set of agreed-upon standards of performance established by experienced, trained experts.  These standards involve mysterious concepts like balance, length, depth, complexity, and trueness to type.  None of these concepts is objectively measurable, by the way.  Come join us at The Wine Society and learn more...you will be grape-ful you did!

Our 1st meeting of the season was on September 20 at TSC.  Lots of great things, great ideas, and great minds joined together at the wine table to decide how & what we wanted to explore & experience in the coming months.  We had a wonderful group that participated in our planning session.  Julie LoBean received the Door Prize of the night……a wonderful bottle of Duplin Almondage Sparkling Wine!  Come join us and see what we are all about!
Your Grape Therapy:
Due to the differences in climate and overall “terroir,” there are certain characteristics that can help even the most novice wine drinker distinguish wines that come from grapes grown in Europe versus elsewhere in the world. Below are a few hints that can help you impress your friends by identifying a wine's origin without even glancing at the label!
European (Old World)
Lower alcohol content

 The summer “Wine Society” hiatus is now over and let us celebrate …Wine Not? 

Wine Society September Update:
Our 1st meeting of the season is just around the corner on September 20 at TSC.  Lots of great things, great ideas, and great minds are joining us at the wine table to decide how & what we want to explore & experience in the coming months.  Won’t you add your name to the list, join us, and participate in our planning session?  Give us a call at the State Club to let us know you are coming and we’ll have some of your favorite wine waiting or bring your favorite wine with you!

My last post asked “what makes you open a bottle of wine” and I received some very interesting responses…. ”work.. vacation… kids….stress… and my favorite response…..”I don’t need a reason to open a bottle of wine; it calls to me lest I forget”! 
Thanks for all your responses……..so let me leave you a very favorite recipe of mine that I received from a friend this summer….on 2nd thought….come to our meeting and pick up a copy of the recipe at the registration table.  “Wolf Packer’s Sparkling Peach-Basil Sangria” has been on my table this summer, what’s been on your table?

The State Club's Own Freshman Orientation...

This week, the State Club had a mother cat with five adorable kittens who attained Alumni status in an unusual way. Staff of The State Club discovered the litter hidden behind a trash receptacle at our delivery doors on Saturday. 

We called Lisa Kroll at the SPCA on Monday, who promptly arrived and was able to remove four of the five immediately. A very dedicated pet rescuer, Lisa made a total of seven trips until she managed to bring in first the mama cat and finally, the elusive #5 at 10:30 Tuesday evening. The kittens were born wild, but are already responding to socialization with humans and will be adoptable in the near future. Their mother is being evaluated, and will be either placed for adoption at the SPCA or will be spayed and re-homed in a colony suitable for her lifestyle. 

The State Club is grateful for the extra efforts of Lisa and the SPCA, whose annual fund-raising Fur Ball will be held at the Club in October. The situation also provided an opportunity to inform many staff members at the Park Center who were concerned about the welfare of these cuties about the valuable work that the Wake County SPCA, which is a non-profit, no-kill shelter, performs. Their website is full of information, and donations are of course welcome, www.Spcawake.org.

What's Cooking In Chef Matt's Kitchen



Fresh Grilled Tacos

The best thing about this recipe is that it is super easy and super fresh.
Set up bowls of cilantro, tomatoes, lime wedges, shredded cheddar or Monterey jack cheese, pico de gallo and whatever else you may want to put on your fresh taco…

Choice of Skirt Steak, Shrimp, Chicken
Marinade meat; juice of 2 limes, 1/4 cup oil, fresh cilantro, salt-pepper-cumin (1 hour)
Flour Tortillas

Grill meat, let it rest and slice.
Put grill marks on tortillas and stack them on a plate
Every man for himself, assemble your taco!

Calling All NC State Alumni....

As you may know, NC State is celebrating its 125th anniversary this year and homecoming is going to be bigger then ever! The State Club, along side the Alumni Association and the Poole College of Management is kicking off the homecoming festivities with a Red and White Food and Wine Festival. The Red and White festival will be made up of restaurant owners, wine & spirit reps and winemakers that all share NC State ties as well as expertise in the food and beverage world. This will be a great time for alumni to gather at the club, celebrate homecoming and taste till their hearts content!

Now we need your help!!! If you or anyone you know might fit the criteria and would like to participate in this amazing event we need you to have them contact the club ASAP! There is no cost to the vendor other then providing the products they will be sampling that evening.

Chalk Talk With TOB

Last nights Chalk Talk with Tom O'brien was a HUGE success! We had about 90 people in Great Reception. The evening began with cocktails and dinner at 6pm and Coach got up to speak at around 7pm. He spoke about his past five seasons at NC State and also what you can expect for the next five. He ended with a question and answer session from members before taking his seat. If you couldn't make last night's chalk talk, keep your eye out for our next Chalk Talk. This is going to be a great year for athletics at NC State!! Go Wolfpack!!

Before the evening officially began (dinner was only being served) we had an unexpected visit from our neighbor, Mr. Beasley (Chancellor Woodson's dog). This is not Mr. Beasley's first time visiting The State Club on his own but we are glad he feels at home here!! We Called Susan Woodson after bringing him into the office so she could come pick him up.

What's Cooking In Chef Matt's Kitchen!


Red Velvet Cookies
Chocolate, semi-sweet (8 oz.)
All-purpose flour (1 ¼ C.)
Cocoa powder (½ C.)
Baking powder (2 t.)
Salt (¼ t.)
Butter 4 oz. (1 stick)
Brown sugar (1 1/3 C., lightly packed)
Eggs (2 ea.)
Vanilla extract (1 t.)
Red food coloring (2 T.)
 Milk (1/3 C.)
Sugar & Confectioner’s sugar as needed


1.     Gently melt chocolate in a double boiler, or in the microwave at small intervals.
2.     Combine flour, cocoa, baking powder, and salt.  Set aside.
3.     In a mixer, cream butter and brown sugar until light and fluffy.  Add eggs, vanilla extract, and red food coloring.  Mix well.
4.     Alternately add dry ingredients and milk into the mixer, beginning and ending with the dry ingredients.
5.     Portion out cookie dough into desired size and refrigerate.
6.     Roll cookies in granulated sugar, followed by confectioner’s sugar.
7.     Bake at 350 for 10-15 minutes.  Cookies should have a crackled appearance when done.
