A day in the life of a party girl!

As members of The State Club, I am sure most of you have met our resident party girl Wendy Dorman. For those of you who haven't had the pleasure, Wendy is our Banquet Director and is responsible for reservations, menu development, staffing and all areas of event planning. Wendy is the brain child behind all the decor for holiday brunches as well as our snow ball that happens every December. When she's not busy planning member events, she's coordinating all the weddings that happen here at the club. Wendy works with each and every one of our brides to help them create the wedding of their dreams. She has so much passion for what she does, it always reflects in the final product.

Whether you want to host an intimate dinner party, an all day business meeting or an extravagant gala we urge you to always consider the club. Wendy will work with you from start to finish to make sure your event goes off without a hitch!

What's Cooking in Chef Matt's Kitchen Today!

Pan Seared Crab Cake With Sweet Corn And Jalapeno Relish
  • 1 lb fresh lump crab meat picked through for any shell fragments
  • 2 c panko
  • 2 tsp fresh lemon juice
  • 1 tsp whole grain mustard
  • 1/4 c mayonnaise
  • 2 egg yolks
  • 1 tsp minced fresh chives
  • 2 or 3 dashes Tabasco
  • 1/4 tsp ground black pepper
  • 1/2 tsp Kosher salt
In a mixing bowl combine lemon juice, mustard, mayo, eggs, chives, and Tabasco to make your dressing. Fold in panko and then slowly fold in crab meat as to not completely break down the lumps in the meat. Season. Portion into desired sized cakes, should make about (6) 4oz cakes.
Bring a Teflon sauté pan to medium heat and sear both sides approximately 3 minutes each side.

Sweet Corn-Jalapeno Relish
  • Fresh Corn husked and shucked of the cob (2 pieces of corn) 
  • 1 fresh jalapeno small diced 
  • ½ cucumber small diced 
  • 1 T. spoon mayo 
  • Zest of (1) lemon

Combine all ingredients. Top crab cake with fresh corn relish and enjoy

Park Scholars Celebrate @ TSC!

It's graduation weekend here at NC State and what better way to kick off the celebration then an event at TSC honoring the Park Scholars.
The Park Scholarships are named for the late Roy H. Park ’31, an NC State alumnus who created the charitable Park Foundation, dedicated to education, media, and the environment.
Since the inaugural class of 25 Park Scholars, the number of scholars on campus has grown to nearly 200. Approximately 45 scholarships are awarded each year to outstanding high school seniors for undergraduate study in any discipline at NC State.

Congrats to the Park Scholars of 2012!!!

It’s “Wine O’clock” Somewhere…….TSC members!

Greetings & Salutations from your Wine Therapist! 
Wine Society Members, after our May meeting on May 17, we will be taking a summer break from our meetings.  We will resume the Wine Society monthly meetings in September  Stay tuned for the dates, and in the meantime, don’t whine, WINE!  Your Wine Therapist will keep in touch with “all things wine” so be prepared to still hear from me.  My first assignment for you….Email me and let me know “what made you drink a glass of wine today?

What is the Wine Society …..a club for fun-loving people who enjoy food, wine, laughter, and getting together for a little “sanity” in their lives, all the while giving back and leaving a legacy!  After all, our motto is  “Red & White” for life.  NC State is red & white, and so is my favorite beverage!  Spain’s philosophy is, “Eat when you drink, drink when you eat”!  I LOVE these people!

Wine Society April Update:
April….wow…what amazing adventure for the Wine Society!  The NC Wine Tour for the Wine Society was so much fun!  We departed the club around 10 o’clock and began the tour with a hearty kick-off Mimosa.  New friends were made and so were great memories.  My pick of the litter……”Shelton Vineyards”.  You just have to visit this winery!

Just as important as the wines themselves are the regions they come from, each with their own particular wines and histories.  This month’s meeting will allow you to draw surprising connections between wines grown in the same area and on opposite sides of the world.  As you blind taste test, you will enhance your abilities to taste and discuss different wines and their regions.
Erin Mosier, from Empire, will help you expand your understanding of the intricate link between a particular place and the wines produced there.  Please RSVP for this event.

2011 Yadkin Valley Riesling, Shelton Vineyards
Shelton Vineyards has just released this awesome spring wine.  While not yet available at TSC, we wait with baited breath for its arrival.  Wow, this refreshing white wine is simply amazing.  Look for it soon at the club!

Conversations With...Giovanni Massucci


Does the world of digital forensics fascinate you? Giovanni Masucci is a Senior Digital Forensic Examiner, and President of National Digital Forensics, Inc. in Raleigh. Giovanni consults government, law enforcement agencies, and corporate about digital forensics, industrial espionage, identity theft, physical and IT security and other technology issues. He works on a multitude of cases including; homicides, wrongful deaths, embezzlement, cyber stalking, malpractice and crimes against children. Giovanni has testified in cases involving digital evidence and has been recognized as an expert witness in court. Lunch begins with informal dialogue and you never know where the conversation may go! A question and answer session rounds the event. All members and their guests are welcome. Space is limited and you must RSVP.

Looking for that wine to beat the summer heat? If you are enjoying grilled fare, a dry Rose or Cote-du-Rhone will do you just right. Do you find you meal a bit on the spicier side of life with BBQ or Mexican? A dry Riesling is just the right thing for these summer treats. And if you like adventure with a touch of the bubbles- try out a Vinho Verde, a Portuguese white with typically fresh fruity and/or floral characteristics.
